These are one of the quickest things I cook on the BBQ. Melt some butter with garlic, coat the prawns, thread them on skewers and they're done in a few minutes. They make a great snack while everything else is still cooking.

Ingredients

  • 24 jumbo prawns, de-shelled
  • ⅓ of a small to medium garlic bulb, minced in a garlic press
  • 1 tablespoon olive oil
  • 50g butter
  • ½ teaspoon salt
  • 6 skewer sticks (4 prawns per skewer)

Serves: 6 people as a snack.
You'll also need: a large microwave-safe bowl, a garlic press, and disposable gloves (optional).

Method

  1. Put the olive oil, butter, salt and garlic in a large bowl.
  2. Microwave for 10–20 seconds, until the butter has melted, then mix.
  3. Add the prawns and coat them in the sauce. You might want disposable gloves on for this.
  4. Thread 4 or more prawns onto each skewer, ready to cook.
  5. Cook on the BBQ for a few minutes on each side, depending on the heat. Check them often, as they're easy to burn.

Over grey, ashed-over coals the prawns cook evenly without burning.

Tips

  • They're done when they turn pink and opaque all the way through. Raw prawns are grey and see-through.
  • Watch them closely. Prawns go from perfect to rubbery very quickly.
  • Wooden skewers: soaking them in water for 20–30 minutes first helps stop the ends burning.
  • Cook over grey coals, not flames. Here's how I light my charcoal.

Food safety: make sure prawns are pink and opaque all the way through before eating, and keep raw seafood away from cooked food.
